Fix a number of instances where the captype man page refers to
capinfos instead of captype. (Copy and paste-o.) Also add captype
to the SEE ALSO section of the capinfos man page.
We've set "=encoding utf8" in wireshark.pod for a long time. Do so in
the rest of our .pod files.
